Beef by the Side
Minka Farm beef is available for purchase as a whole steer, half steer (a side) or quarter steer, ready to be stored in your chest freezer, for a cost-effective way to keep our high quality, grassfed beef on hand.
General Pricing Info
Pricing is based on quantity purchased and the hanging weight. Hanging weight is the weight at harvest of just meat and bones. This is not the weight that will come home to your freezer. The take-home weight depends in part on how the beef is cut, but with a fairly standard set of cuts, our processor (Chaudhry Halal Meats) returns around 70% of the hanging weight. An average steer has a hanging weight of 600 lbs for the whole steer, 300 lbs for a half steer, and 150 lbs for a quarter steer.
When you are ready to order freezer beef, email us at firstname.lastname@example.org and we will send you an invoice to reserve your portion with a non-refundable deposit. You can pay the deposit online (PayPal or credit card) or send us a check. You will receive an initial invoice that is based on average weights with the deposit applied toward your balance. Once the hanging weight is known, about 10 days before delivery, you will receive a corrected invoice that will show the actual hanging weight, the full cost and the balance due. The balance is due upon delivery of the beef. Because the mark-up on freezer beef is minimal, the balance must be paid with cash or check. There is no sales tax due when beef is purchased in this manner.
Whole Steer (2 sides)
If you order a whole steer, the beef is custom cut. You get to choose how thick the steaks are cut, which cuts are kept bone-in or made boneless, and more. Once you reserve your beef, we send you a file that you will fill out with your cut instructions. If you want a cut that is not listed in the instructions, just ask and we’ll figure out where that cut comes from and what other cuts it will replace. You can fill out one set of instructions to be applied to both sides, or you can give different cut instructions for each side. The deposit for a whole steer is $300. Price: $4.35/lb hanging weight. Average cost is $2.610. You will need about 22 cu. ft. of freezer space for a whole steer.

Half Steer (1 Side)
A half steer order is also custom cut. You will fill out one set of cut instructions for a half steer. Once you reserve your beef, we send you a file that you will fill out with your cut instructions. You get to choose how thick the steaks are cut, which cuts are kept bone-in or made boneless, and more. If you want a cut that is not listed in the instructions, just ask and we’ll figure out where that cut comes from and what other cuts it will replace. The deposit for a half steer is $250. Price: $4.50/lb hanging weight. Average cost is $1,350. You will need about 12 cu. ft. of freezer space for a half steer.
For a quarter steer, there is a standard set of cuts because you are actually sharing a side with someone else and we need to be able to divide the cuts in half. The cuts you will receive from a quarter steer include: tenderloin filet, NY strip, boneless ribeyes, sirloin steak, brisket, London Broil, flank, skirt, chuck & shoulder roasts, eye of round, flat iron, bottom round, short ribs, ground beef, ground beef patties, stew meat, sirloin tip steaks, liver, soup bones (cut into 2″ cubes with exposed marrow), and knuckle bones. The deposit for a quarter steer is $200. Price: $4.75/lb hanging weight. Average cost is $713. You will need about 6 cu. ft. of freezer space for a quarter steer.
Processing, packaging each cut individually in clear freezer plastic, and labeling are all included in the price of the beef. Delivery to Siler City, Durham, Raleigh, Cary, Apex, Chapel Hill, Hillsborough, Mebane, or Burlington is included as well. If you live outside those areas, we can meet in the middle or we can calculate a delivery fee for the additional distance. Starting in January 2021, if you want an inventory of your beef, it will cost an extra $25 and must be requested at least one week before delivery. The inventory consists of an excel file of every cut you receive, cut name and package sizes. Our processor does not have an automated system to produce inventories so we must do these manually at the time of pickup.
Below are the dates of beef availability for 2020-2021. The listed month is the month of delivery, but please note that many times, your order will need to be placed before that month. Our beef is dry-aged for tenderness and flavor for 2 weeks so we need to have orders far enough in advance to accommodate the dry-aging and cutting schedules of the processor. If we do not sell an entire beef for any given month, you may be asked to wait for the next available date.
Deposits and Payments
Deposits vary by the amount you order: $200 for a quarter, $250 for a side and $300 for a whole steer. These are non-refundable and reserve your beef. Deposits can be made by check or PayPal (www.PayPal.me/minkafarm). We will email you an estimate with the deposit applied once it’s received. The estimate is based on our averages. An invoice will be emailed once we have the actual hanging weight. That balance is due at delivery and must be paid with cash or check.
